German chamomile essential oil is steam distilled from the flowers of Matricaria chamomilla,the taller, annual chamomile native to Europe and western Asia. What makes German chamomile immediately distinctive from Roman chamomile is its extraordinary deep blue color,one of the most visually striking phenomena in natural plant chemistry. That color comes from chamazulene, a compound that does not exist in the fresh plant but forms during steam distillation as a byproduct of the breakdown of matricine. The deeper the blue, the higher the chamazulene content,and the more potently anti-inflammatory the oil.
