Lemon balm is a fragrant herb in the mint family, native to the eastern Mediterranean and western Asia, that has naturalized across much of Europe where it grows freely in gardens, hedgerows, and along roadsides. Its gentle lemon scent, released when the leaves are bruised, has made it a beloved herb in French and European cottage garden traditions for centuries. The Carmelite nuns of Paris famously distilled it into Eau de Mélisse, a tonic used since the 17th century.
